First thing you should know, I am not a big fan of sweet potatoes. I like them occasionally, but usually as a dessert dish given they are so sweet. My toddler son and my husband both love them, so I wanted to give this recipe a try. Roasting should be a busy momma’s go to because it’s super simple.

I will say, that chopping through a raw, very large sweet potato took way more effort than I was prepared for. Make sure your knife is super sharp! I think next time, I would put the potatoes, oil, honey and cinnamon in a bowl and mix it that way vs on the pan that way you get more of an even coating.

I fully expected this to need to bake much longer than it called for, but if you follow the instructions and slice them into one inch bites, it should cook in the exact amount of time the recipe says.

This would be a great compliment to almost any dish, I highly recommend it. The only reason I didn’t give it 4 stars on taste is because, like I said, I’m not a big fan of sweet potatoes.
