You guys know I love me some Trisha Yearwood and  “Trisha’s Southern Kitchen” on Food Network. I enjoy her talent of singing and cooking and I’ve been a big fan of her husband Garth Brooks for nearly thirty years.

I’ve made Trisha Yearwood’s Company Chicken at least half a dozen times this year. When I say it has become a staple, I mean it. It is my FAVORITE recipe I have tried to date! Okay, I say this a lot, but this is the dish I serve when guests come over. It is so yummy. It is fairly easy to make, especially if you buy the mushrooms already sliced. Typically, I feel like chicken breasts these days are sold too large so I slice my chicken breasts in half and get double the meals out of it. A chicken breast does not need to be one pound of meat per chicken breast in my opinion. So, one package of three chicken breasts with the breasts sliced in half should work well for this recipe.

I will tell you, this dish is SALTY! I LOVE salty food, but there is too much salt in this recipe. A couple of tips I have for making it less salty: unsalted butter and try sprinkling the chicken with the Italian dressing mix vs coating it.

This dish isn’t “pretty.” It’s brown and creamy and covered in mushrooms. However, stack it on top of a carb like some creamy potatoes or rice and it will help make it look much prettier. My favorite is to serve this with creamy potatoes and pour a little extra of the mushroom gravy over the potatoes! There are two reasons this dish didn’t get 5 stars – it costs a good amount when you have to buy the white wine and also the amount of time it takes is hefty but SO worth it!
