This recipe from Tiffany at Creme de la Crumb is an absolute winner! Something I need in my house is things that are easy to make and memorable so I can memorize the recipe and officially make it a staple.

The price is a bit on the higher end of the recipes that become a staple in my house, but the three kinds of cheese and chicken don’t help with that. Waiting on the onions to darken feels like it takes forever because in most recipes you are waiting on the onions to turn translucent which only takes a few minutes. The chicken cooks quickly though, especially if you pound it out as the recipe calls for.

The taste is out of this world, especially if you like onions! It’s rich and juicy from the beef broth and the seasoning on the chicken puts it over the edge. It is fairly easy to prep and make. However, I will say it is hard to find four packs of chicken breasts where I shop, so I tend to buy organic chicken in a pack of three and cut them in half as two pounds for a chicken breast is a lot of meat and can take forever to cook. I would say a pound per chicken breast or maybe even a little less than a pound should work well.

I will admit this is my second time making this dish and the first time I did not read the instructions correctly and therefore it didn’t match the picture posted by Tiffany at all. However, this time around it looks much better because I actually followed Tiffany’s instructions (that helps) and it turned out perfect! My husband absolutely loves this dish and has requested it be a regular in my menu prep.

Tweaks of my own I made to the recipe:
1. I used a package of three chicken breasts, cut them in half and used four of the halves.
2. I used one large yellow onion instead of two medium onions.
