My husband and I are trying to eat healthier and the fact that this recipe was advertised as an option for the Whole30 way of eating, I decided to give it a try. We aren’t necessarily doing “Whole30,” I just wanted to try and make healthier food. The prep for this was super easy and I was able to prep it during nap time and leave it in the refrigerator until my husband was on his way home. Instead of grilling it on a grill or George Forman indoor grill, I threw it in on a searing hot cast-iron grilling skillet and then finished it off in the oven. It took about ten minutes in the oven once I got the good, crispy grill marks on the stove.
The flavor of the salmon was wonderful, I will definitely use this seasoning mix again for salmon. However, the recipe for the avocado salsa left a crucial piece of information out. Not all limes are the same size. The limes that were included in my Kroger Click-List basket were the size of a small russet potato. So, when the recipe calls for “2 limes juiced” that seems very vague. I did it, knowing all the while that it was way too much lime juice. But, for the sake of trying to recipe I went for it. I ended up draining one lime worth of juice off the salsa and my husband and I both cringed at how citrusy (is that a word?) the salsa was. So, my recommendation is to slowly add some lime juice to the salsa to taste. I would suggested that The Cookie Rookie altar the recipe to include exactly how much lime juice she recommends for this recipe.
All in all, I will make this recipe again. I may leave off the avocado salsa or slowly add the lime juice to it.
