After having the Chicken Pastor tacos at BarTaco in Nashville, I was inspired to search for a recipe to make these at home. Typically this dish is made with pork, but the chicken brings this recipe to a whole new level. We love pineapple, ESPECIALLY grilled pineapple so this recipe was a no-brainer.

The guajillo chiles were hard for me to find, but apparently you can order them on Amazon. Click on the picture below to order them in advance.

Since I didn’t plan ahead for this recipe, I purchased dried ancho chiles instead. They are similar to guajillo chiles so the substitution worked well.

I had not worked with dried chiles before so this was an interesting adventure. Making the marinade was also interesting for me, as I really hadn’t used my blender to create a marinade before.

I let these marinate in the refrigerator for an hour and probably could have left them overnight.

We grilled them on skewers and propped them up over the fire like a rotisserie without the rotation and used a fresh, super ripe pineapple and it was all perfect! The grilled pineapple was perfection! Overall, I highly recommend this recipe with some tortillas and grilled pineapple for the most yummy tacos you’ve had in a while!
