I have searched high and low for a great breakfast casserole. I’ve had to throw out several dishes mostly full of eggs. I love to bring egg dishes to events as well as needed that “go to” breakfast dish for when guests come to visit. I need it to be quick and easy and be something I can make the night before. Also, it needs to taste good and make my guests think I can cook. With all of these requirements, it’s a tall order.
However, Ashleigh’s recipe for the Ultimate Overnight Breakfast Casserole knocks all of these things out of the park and checks all my boxes! The cost is low, the taste is great, and my guests have all loved it, and most go back for seconds!
If there was a negative, it’s the amount of time and prep needed to make it. I know that 20 minutes of prep may not seem like a lot, but when you have a two-year old running around singing songs and saying “momma” every two minutes it can seem like an eternity. I may try cutting out the bell pepper next time so there’s not so much to chop up. Or, if I cared more about my time and less about my money I would buy pre-chopped bell pepper from the grocery store. The overall time to cook is what gave this dish a 4 and not 4.5 stars in my ratings.
The fact that I can make this the night before and leave it in the fridge overnight is WONDERFUL! I have a feeling I will be doing this for Christmas this year!
The English muffins worked perfectly in this dish and I had not seen them used in any other breakfast casseroles I had tried before. I highly recommend you try this breakfast casserole – it’s been cooked at least a half dozen times in the past six months in our house and will continue to be one I serve to guests.
P.S. I have even made this recipe as gluten-free with gluten-free english muffins and my guests raved!
