Each year for Halloween, my tradition is to make something containing pumpkin. I like pumpkin in baked goods, but that is pretty much it. No PSL’s (pumpkin spiced latte’s) for me. This tradition forces me to both try new recipes and try to cook with pumpkin at least once a year. This year I decided to try to make The Exhausted Mom’s Pumpkin Cake with Cream Cheese Frosting. Even by the name of her blog, I can tell Alexis and I would be friends because REAL LIFE being a mom is EXHAUSTING! I was impressed with how easy it was to make this pumpkin cake, despite in the middle of making it realizing I didn’t have as much flour or oil that I thought I had at home and had to run to the grocery store after the kids went to bed (I bet I’m the only mom that does this).

I’m not a huge baker, so I need cake recipes that are simple and easy. I will admit that I made a giant mess making the frosting in my stand mixer. My two-year-old thought it was funny that there was powdered sugar all over the floor and my dog was hyped up on sugar the rest of the day (don’t judge me). Overall, it tasted good and my guests liked it. I would recommend it if you are needing a pumpkin cake recipe that is reliable and easy.
