Wow! I’ve been making this recipe for years. I love chili and I love white chicken chili, but I wanted to find a recipe that tasted like normal tomato based chili, but with chicken. This recipe does that! Over the years, I have learned to tweak the recipe a bit to make it easier and quicker to make without sacrificing flavor.
First of all, instead of buying 8 boneless chicken breast halves, I buy a pre-cooked rotisserie chicken you buy hot from the store. You can typically find this in most grocery stores near the produce or deli section. These typically run about 2 lbs in size. Make sure and buy the original flavored ones and not one that have barbeque seasoning, etc. on it. Make the broth as instructed and once it’s boiling, drop in the rotisserie chicken and all it’s juices into the broth. Boil it for 15 minutes covered. Take out the rotisserie chicken and shred it. The broth is ready to go after only 15 minutes vs an hour with raw chicken. Second, I eliminate the whole tomatoes from the recipe, as it’s a little too tomatoey for me. That’s all I do differently. It takes about 45 minutes off of the total recipe time, so it only takes about 45 minutes to make, if that.
I highly recommend it and it’s not too spicy. An idea to spice it up would be to purchase medium or hot salsa and medium or hot chili beans in sauce. You could also just add extra chili powder. Enjoy!
